Pastured Pork Leg Roast Recipe

This pastured pork leg roast recipe makes for a beautiful dinner centerpiece with an incredible crispy and flavorful skin! Easy to make with just a few simple ingredients! 

Easy Pastured Pork Leg Roast

Serves: 6

Time: 10 minutes active, 2 hours inactive

 

Ingredients

  • 1 3-4 lb pork leg roast, bone-in
  • 1/3 cup olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 2 apples, type of choice

Instructions

  1. Thaw the roast completely.
  2. Preheat the oven to 450 degrees F.
  3. Set the roast in a lightly oiled Dutch oven, baking pan, or large cast iron pan. Face the fattiest side of the roast up (rind up).
  4. Drizzle the olive oil over the surface of the roast. 
  5. Sprinkle the salt, pepper, and garlic powder over the surface of the roast. 
  6. Massage well with your hands to get the seasonings and oil well rubbed into the surface of the roast. 
  7. Slice the apples into eighths and place in the pan around the roast. 
  8. Place the whole thing in the oven and roast for 45 minutes. 
  9. Reduce temperature to 350 degrees F and cook for another 30-45 minutes, until the interior temperature of the roast reads 160 degrees F with a thermometer check. 
  10. Remove from the oven and allow to rest for 15 minutes before slicing (this allows the juices to be absorbed into the roast and the roast to finish cooking). 
  11. Serve in the juices in the pan.
