Pastured Pork Leg Roast Recipe

Easy Pastured Pork Leg Roast

Time: 10 minutes active, 2 hours inactive
Ingredients
- 1 3-4 lb pork leg roast, bone-in
- 1/3 cup olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 2 apples, type of choice
Instructions
- Thaw the roast completely.
- Preheat the oven to 450 degrees F.
- Set the roast in a lightly oiled Dutch oven, baking pan, or large cast iron pan. Face the fattiest side of the roast up (rind up).
- Drizzle the olive oil over the surface of the roast.
- Sprinkle the salt, pepper, and garlic powder over the surface of the roast.
- Massage well with your hands to get the seasonings and oil well rubbed into the surface of the roast.
- Slice the apples into eighths and place in the pan around the roast.
- Place the whole thing in the oven and roast for 45 minutes.
- Reduce temperature to 350 degrees F and cook for another 30-45 minutes, until the interior temperature of the roast reads 160 degrees F with a thermometer check.
- Remove from the oven and allow to rest for 15 minutes before slicing (this allows the juices to be absorbed into the roast and the roast to finish cooking).
- Serve in the juices in the pan.
