Simple Pan-Fried Boneless Chicken Thighs or Breasts
Here's an easy way to fry up some of that lovely pastured chicken from Stice Family Farm! This is a very simple recipe with just basic ingredients that you can find at the local grocery store.
Serves: 4
Time: 30 minutes active
Ingredients
- 3 sprigs fresh thyme, chopped
- 1 sprig fresh rosemary, chopped
- Half a lemon
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp olive oil
- 4 pastured boneless chicken thighs or breasts
- 3 tbsp butter
- 2 cloves garlic, chopped
- 1 tbsp honey
Instructions
- Place the thighs on a plate, sprinkle on thyme, rosemary, salt, pepper, and olive oil, and massage into thighs.
- Place a cast iron pan over medium heat, add 2 tbsp butter.
- When hot, add the thighs.
- Cook, flipping occasionally, until nearly done and internal temperature reads 150 degrees F. If pan seems to be drying out, add the remaining 1 T of butter. At some point you may also want to add a splatter screen or paper towel to the top of the pan to keep grease from splattering.
- In the last 5 minutes of cooking, add the chopped garlic and honey. Cook until internal temp reads 165 degrees F.
