  • Be aware that there is a little variation from what you see picture in the photo. Skirt steaks are somewhat variable in length and width! However, this cut cooks up beautifully in fajitas (in fact, it's the most frequently used cut in a fajita recipe). You can also make great beef pinwheels with a skirt steak!
  • The main thing to remember about skirt steaks is that the grain doesn't run longitudinally, which means you cut along the long edge in order to cut perpendicular to the grain (which makes for the best tenderness)!
